Pepper stuffed with lean ground beef and black beans. I season the beef with Worcestershire, cayenne pepper, chili pepper, garlic powder, onion powder, finely chopped chipotle peppers and ground black pepper. Once the beef is cooked, I drain and rinse the canned beans and add them to the beef. Drain off the excess fat, let cool and stuff your peppers with the beef/bean mixture. Grate your favourite cheese on top (just a bit!)–I used pepper-jack. Cook peppers on 400 for about 50 minutes, uncovered.
